Located at 7 Bridge Street, in heart of the financial district and a short stroll to Circular Quay. Positioned in a heritage-listed building, originally headquarters for the Burns Philp group of companies. The building's imposing sandstone façade leads to the opulent style dining room and bar areas. The vaulted ceilings, brass chandeliers and colonial textures create a warm, inviting ambience, complimented by plush banquette seating.

FOOD & WINE

FOOD

The menu as you will see, caters to both men and women who enjoy the combination of a good wine, with an even better steak. There are also options available for vegetarian diners, such as light seafood and salad dishes to cater to the discerning diner.

Kingsleys believes in serving premium quality beef in a simple manner allowing true flavour and texture to be appreciated.

Kingsleys Southern Grain Fed Beef
Working with Cargill Foods Australia in Wagga Wagga, we select British breeds such as Angus, Hereford and Shorthorn.

The steers remain on feed for up to 100 days to produce the most important quality in our product marbling. This is the highly sought after intra-muscular dispersion of fat throughout the meat giving maximum juiciness and flavour.

Following selection process the premium cuts are then aged for 30-45 days in controlled conditions and graded by our meat experts in state of the art export processing facilities. The result is an export quality product graded from the top 1% of Australian beef.

Wagyu F1 Cross
Japan is renowned as having the best beef in the world the famous Kobe beef from the Tajima, Wagyu is a Western term meaning Japanese cattle and F1 Cross means it is the first cross with an Australian Angus.

One of the main reasons for Wagyu being so well received is the high marble score, a normal strip loin would have a score of 3 where as our Wagyu striploin has a marble score of 6, the marbling is mono unsaturated fat with a low melting point so most of the fat renders off during cooking, basically basting its self while it cooks giving it a melt in the mouth texture with a rich flavour.
 
Certified Australian Angus Beef (CAAB) 
An initiative of the Angus Society of Australia on behalf of its members, the Angus breeders of Australia. Angus leads the world in genetic performance evaluation in all aspects of superior beef production. Along with MSA systems the utilisation of the world’s largest and most sophisticated beef carcass genetics database provides perfect flavour and tenderness.

The comprehensive wine lists at Kingsleys have been designed as the perfect accompaniments to the high quality produce that is featured daily on the menu. Our wine lists feature an extensive selection of Australian regional red and white wines. Catering to all from the regular diner to the connoisseur. Included in the range is the award winning Kingsleys Hunter Valley collection wines.

In addition, there is a vast selection of premium spirits, ports, liqueurs to choose from as well as a complete list of Australian and imported beers. A challenging selection of single malt whisky, Scotch and Cognac is available to match the cigar of your choice at the conclusion of your meal.

We advise pre-selecting wines for all group reservations. Please make your selection from our wine list or if you prefer, allow us to make suggestions that will compliment the menu for your event.

At 11-14 months of age the steers are contracted to Cargill’s Jindalee Feed Lot for fattening. The cattle are fed on a ration formulation of 73% Wheat & Barley, 7% Protein Supplement, 5% Vitamin Supplement and 15% Roughage (hay) fed on a consistent basis so cattle always have feed.
The steers remain on feed for 100 days to produce the most important quality in our product marbling. This is the highly sought after intra-muscular dispersion of fat throughout the meat giving maximum juiciness and flavour.
Following the selection process the premium cuts are then Wet aged for 30-45 days in controlled conditions and graded by our meat experts in state of the art export processing facilities. The result is an export quality product graded from the top 1% of Australian Beef.

Havericks Dry Aged Beef
  Dry-Aging was the standard until about 25 years ago when wet-aging, a different process that allows meat to age in its own juices while in vacuum-sealed bags, began to take its place.
The advantage of this process was that they could "wet age" the beef in the bag and not lose any of the weight of the beef. Wet aging was much more cost effective for the processors so a weaning of the consumers' taste buds began to occur. Slowly, the consumer forgot what the real taste of steak was.
Our dry-aged beef is stored in the Havericks custom-designed dry-aged cooler where a complex process incorporates an intricate and delicate balance of time, temperature, air circulation and humidity. Over time as the beef ages openly exposed to the elements inside the cooler, the beef's enzymes break down and during this process a crust forms on the outside of the loin, very similar to the texture of beef jerky. This layer is trimmed away, leaving steaks that are superior in tendernesswith a buttery taste and nutty aroma.

Wagyu F1 Cross
Japan is renowned for having the best beef in the world the famous Kobe beef from the Tamjima, Wagyu is a Western term meaning Japanese cattle and F1 Cross means its is the first cross with an Australian Angus.
One of the main reasons for Wagyu being so well received is the high marble score, a normal striploin would have a marble score of 3 where as our Wagyu striploin has a marble score of 6, the marbling is mono unsaturated fat with a low melting point so most of the fat renders off during cooking, basically basting itself while it cooks giving it a melt in the mouth texture with a rich flavour.

BLUE - Sealed outside while steak is at room temperature.

MEDIUM - Predominantly grey with a pink centre.

RARE - Cooked for approximately two minutes on each side, still very bloody.

MEDIUM WELL - Grey from edge to edge with slight pink centre.

MEDIUM RARE - Maintains a medium red strip in  the centre with grey edges.

WELL DONE - Very firm with little juice. Grey throughout.

To design a Kingsleys Set Menu please select a venue and menu package from above, then select 3 items from each course listed below. A minimised Kingsleys Set Menu is then personalised to your function (please refer to sample menu on page 2). For functions of 30 or more guests, please select 2 items from each course and all are served on a 50/50 alternate basis (this may vary on an individual group or venue basis).  Vegetarian options are available upon request.
